There is an idea out there that caring for orchids in a greenhouse is difficult. The truth is that they aren't the easiest to raise in a greenhouse, but they certainly aren't the most difficult. Humidity can be controlled with a humidifier and heat, during the winter, with a heater of some sort. Secondly, caring for orchids requires that you prevent disease from spreading around in your greenhouse. To do this, make sure you stop unwanted cross pollination. Keep any fans you use cleaned off so that they do not end up shooting diseased pollen throughout your greenhouse.
